***Prep without Depp! *** Fermentation is not only delicious — it's also a smart, sustainable and joyful way to prep your kitchen with flavours that last for months. In this course, you'll learn how to create leavened vegetables, side dishes, sauces and condiments that elevate everything from the everyday dinner to the festive table. You'll learn the basics of lactic souring, pickling and vinegar fermentation, and experiment with flavour combinations, storage and fermentation safety. You go home with a little bubbling flavor library. We also explore how fermentation reduces food waste ♻️ and increases food enjoyment in everyday life. Layout We start the day in the garden kitchen with a lunch based on locally produced, grilled tempeh and vegetables from the local area. During lunch, we taste various fermented side dishes and talk about how fermentation can become a natural part of everyday life. After an inspirational lecture on basics, technology and taste, we begin to work practically. You get to create your own fermentations to bring home. **For whom? ** For beginners and curious home cooks — no prior knowledge required. The course is 100% herbal. 🌿

Practical information
Bring 5 glass jars between 400-1000 ml
  • Take clothes according to the weather, we will be staying outdoors so a warm sweater or jacket is needed if it gets cold. We have surfaces that protect against rain.
  • Our dog Bosse is a kind weimaraner but it will be difficult to have several dogs in the garden. Please leave your dogs at home.
**Find here: ** It is possible to go by public transport, plan your trip in SL, the buses from the University of Technology to Norrtälje leave every 20 minutes and the buses from Norrtälje to Spillerboda run 3 times a day Please indicate if you need pick-up from Norrtälje in the booking. *By car: * Take the E18 towards Norrtälje. The journey takes about an hour, depending on traffic conditions. Parking: Follow the directions, parking on the large turning point next door.
